So I know that there are many of you out there who are just like me when it comes to taking care of our nutritional needs. It’s non existent basically! I know I am guilty of not eating the way that I should.
I know that there are way too many people out there who are not eating properly. And I know this because of the outrageous line I see when I go by McDonald’s!
I have to say I am amazed by how devoted some people are to getting their Big Mac! I swear that line is almost always out to the road when I go by. I mean I like my drive thru food just as much as the next person, but I can not deal with those types of lines.
So I usually just drive right on by. So I decided recently to start trying to eat better at home. I made some fried pork chops with mashed potatoes, and spinach the other night. And then I turned around and made a beef roast I had in the fridge. With potatoes and carrots.
And to top it off I actually turned around and made a huge crockpot full of beef vegetable soup yesterday. So this is pretty amazing for me. I am the person who tries to get out of cooking whenever I possibly can.
I can cook. I can actually cook rather well. My mother and my grandmother were excellent cooks. And I have followed in their footsteps along the lines of how well I can cook. But I just do not care for the whole cooking thing.
Beef Vegetable Soup
What You Will Need
1. Beef (can use canned or get a beef roast and cook)
A. Corn, green beans, peas, potatoes, and carrots.
3. Tomato Juice
4. Diced Tomatoes
5. Tomato Paste
6. Crock Pot or you can cook on the stove top if you prefer.
You can of course alter your vegetables to whatever you like or don’t like. These are the vegetables that I use in mine. Well minus the peas. I hate peas! But I know a lot of people love them. And so I will throw a can in there just for good measure.
I also have just recently started using canned beef. And it is actually very good! I had always used a beef roast. And with that comes the cooking of the beef roast. With the canned stuff, you do nothing more than add the can of beef!
Much easier and quicker. But it’s all up to you on which way you want to go.
Getting it ready
So you just take your large crockpot, if you have one, and turn it on. Put it on high. Then you will start adding all of your canned vegetables. ( I use a lot of mixed vegetables)
Using mixed vegetables for me is always much easier because it gives you all your vegetables in your one can. Instead of worrying about whether you have all the right veggies at hand.
For the potatoes and carrots I personally will use real potatoes. I will peel them and dice them up into sort of bite size pieces. And my carrots I usually will peel and cut up into little pieces.
You can use canned potatoes and canned carrots if you don’t want to go to the trouble of doing the peeling and cutting up.
Then you will add your diced tomatoes, your tomato juice, and your tomato paste. And of course your salt and pepper goes in at this time. Just add it accordingly to what your family likes.
And then you just let it cook in the crockpot on high. I let mine cook overnight usually. That is why I love crockpots. You don’t have to worry about them like you do when you have something cooking in the stove or the oven.
This is a very easy meal to make and it’s very good for you. At least I think it is lol! They change what is good for us and what isn’t so much you never know!
